2. If you intend to use red cabbage as a pH indicator, boil red cabbage in a covered pan for 30 minutes or a microwave oven for 10 minutes.
Do not let the water boil away. Let cool and pour off the liquid, which will be the indicator. An alternative preparation method is to soak the
red cabbage pieces in hot water for about ten minutes or put cabbage and water in a blender and then filter. The cabbage juice will change
from deep purple to red in the presence of an acid and to blue-green in the presence of a base.
